OUR STORY

It all began in the summer of 2003 when John and Lisa Thibodeau decided to open their first ice cream truck just in time for the July 4th weekend. What started as a side business for a little extra income quickly turned into something much bigger. Whether they realized it or not, Thibby's Ice Cream Truck became a beloved fixture in Green Bay. Over the years, John and Lisa received numerous accolades and media recognition, but the most rewarding part of their journey was the smiling faces they saw each day. One such article, published on July 6, 2004, came just one year after the truck first hit the streets.

NEW OWNERS STORY

After serving the community with joy for fourteen years, John and Lisa made the bittersweet decision to sell their beloved ice cream truck. In 2017, Bob Patterson and Terri Larson took over, continuing the Thibby’s legacy and keeping the business thriving. However, by 2021, Terri posted on Facebook that they had reached a crossroads: “We want to thank you all for your support and loyalty. Unfortunately, we are so busy that we can’t keep up. So, we’ve made the tough decision to sell the business to someone who can take it to the next level. We wanted to reach out to our friends, family, and customers first, to see if there was someone who already knew and loved Thibby’s and would want to take over.”

Enter the Duncan family, who had been enjoying Thibby's ice cream at family gatherings since 2012. They saw the opportunity as the perfect way to keep the tradition alive and continue making memories with the Green Bay community.

Then, in 2024, a young, ambitious high school senior named Owen Wick knew he needed to find a summer job. But Owen had bigger dreams—he wanted to be his own boss. When his aunt, Terri, mentioned that Thibby’s was for sale, Owen’s entrepreneurial spirit kicked into high gear. With the support of a few investors (thanks to Aunt Terri and his parents), Owen became the proud owner of Thibby’s Ice Cream Truck!

“It’s always been my goal to run my own business, and what better way to do that than with ice cream—one of my all-time favorite treats!” Owen said.

During the school year, Owen attends Montana State University, where he studies Mechanical Engineering and Chinese. But every summer, he returns to Green Bay to run the ice cream truck and continue growing the business he loves.

“My first summer running the truck was full of excitement, surprises, and plenty of lessons. One big surprise? Just how far a truck with 350,000 miles could go—turns out, not very far! Thankfully, Rawhide came to the rescue and helped me retire the old truck.”

 

As Owen kicks off his second season as owner, he’s excited to introduce a brand-new ice cream truck, still decked out in the signature yellow and splashy graphics fans know and love. While the truck may be new, Owen will still be behind the wheel, ready to serve up the sweet treats that have made Thibby’s a community favorite.

And who knows—if you’ve ever dreamed of owning an ice cream truck, keep us in mind! Owen won’t be behind the wheel forever, and someday, another loyal Thibby’s customer may take over and continue spreading joy through ice cream for years to come.
